When running update operations with a sparse resource object, we're using MongoDB's `mongoConverter.write` method to build a map-like object, to then build an `Update` object out of. But this `mongoConverter.write` won't be available on Postgres, so we have to do it without it there. For consistency, we're bringing that implementation here.
