test: better size assertions in tests (#30937)

Instead of a failure showing up like this:

```
org.opentest4j.AssertionFailedError: 
expected: 2
 but was: 0
Expected :2
Actual   :0
```

We get something like this:

```
java.lang.AssertionError: 
Expected size: 2 but was: 0 in:
{}
```

Which is a better insight into the test failure.
